Wine Making - Jaboticabas - Plastic Bucket
I have been quite busy the last 2 days setting up 5 buckets for some wine making with the Amazonian tropical fruit - jaboticaba. These make excellent wine, liqueur and jam. For 2 days have been picking the fruit and setting up the buckets, and making jam too. The photos this time are of the wine start. Shortly I shall post the jam ones.
The yeast was added yesterday and today it is well under way so it needs stirring frequently so the fruit is not pushed to the top to dry out. This photo here is of me stirring a bucket in the fermentation stage about 3 hours ago. I keep doing this for 6 days then another operation begins. There is a real yeasty smell associated with this.
More water and sugar has to be added to each bucket and then later on goes into a fermentation glass jar for several months. Each bucket and jar will produce about 5 bottles (750 ml). I don't drink beer or spirits and just a small amount of wine but I love experimenting. The bubbles are carbon dioxide from the chemical reaction of yeast and sugar and fruit.
